I'm In Love with Spinach and Artichokes

Spinach and Artichoke Ravioli Bake

I have an incredibly weird obsession with spinach and artichokes together. When I was diagnosed with ulcerative colitis, I found out that having red pizza would be disastrous for me. The doctors told me I could have white pizza because there is less acidity. That’s when I found my love for spinach and artichokes. I’m telling youorder a white pizza tonight with spinach and artichokes and you will thank me later J

Anywho, one night I was looking for a recipe that included both of these ingredients. I came across www.thecookingjar.com, and found something interesting, but the picture literally made me drool. SeriouslyI have an addiction to food. So, it’s not out of the ordinary that a picture of food made me drool.

It was called Spinach and Artichoke Ravioli Bake. I did not change the recipe that I found on the cooking jar because all of the ingredients seem to be something my husband and I both like, but I didn’t find the Italian Cheese Blend that it asked for, so I ended up just using a whole bunch of Mozzarella cheese because you can’t go wrong there!

Ingredients
    5 oz. fresh baby spinach, chopped
    1 can (16 oz.) artichoke hearts, diced
    2 tablespoons pesto
    2 cups Alfredo sauce
    ¼ cup vegetable/chicken broth
    25 oz. frozen ravioli
    1 cup Italian cheese blend, shredded


INSTRUCTIONS
1   Combine spinach, artichoke and pesto and mix well
2  In a separate bowl, combine Alfredo sauce and broth
3  Spread of the Alfredo sauce on the bottom of a 9x13 baking dish
4  Top with half the spinach mixture
5  Lay half the ravioli in a single layer over the spinach
6  Repeat layers once more
7  Finish up with the remaining Alfredo sauce
8  Bake uncovered at 375 degrees for 30 minutes
9   Sprinkle with cheeses and broil at 450 degrees for 3-5 minutes
10            Dish and serve hot

I made this in a casserole dish and it lasted for two nights of leftovers. It really all depends. My husband and I had two pieces of ravioli each night. The first night I made this the side dish was avocado toast. I will be sharing that recipe on another Friday it’s delicious!
